2 In 1 Steamed Chicken/Soup



Ingredients (Chicken)

1/2 kampung chicken
A half pot of water

Method
1) When the water has boiled, put the chicken into it and turn off the heat and let it steamed in the water for 5 min. Remove chicken. Repeat this for 3 times.
2) After the 3rd time, remove chicken and cut into pieces.



Ingredients (Soup)

2 Carrots, diced
Corn
2 tomatoes, cut into 4 pieces
2 Potatoes (diced)
2 Onions (chop into a few pieces)
Salt to taste

Method

1) With the pot of chicken stock, add in all the ingredients, and boil for another 1.5 hours on medium or low heat.
2) Add in salt to taste if necessary



Ingredients (Ginger Sauce, mix well)
1 no of shredded ginger
3 or 4 shallots, cut into small pieces
1 tbsp sesame oil
1 tbsp chicken stock
1-2 tbsp soya sauce

Fan Kok Soup


Ingredients
About 200-300gm of fan kok, remove skin and cut into small pieces
250gm pork bone
1 tbsp gei zhi
15 nos of red dates
2 tbsp peanuts
Salt to taste
Pot of water

Method:
1) Add all ingredients into a pot of boiling water and cook for 2.5 hours on medium to small heat.
2) Add in salt to taste.

Fish Fillet And Spinach Soup


Ingredients
200gm fish fillet, sliced
1 tbsp oil, 5 slices ginger
800ml water
300g spinach/choy sum

Marinade
1/4 tsp salt
Dash of corn flour

Seasoning
1 tsp concentrated chicken stock
Dash of salt and pepper

1 deep fried yao char kwai, sliced

Method

1. Mix fish with marinade
2. Heat up oil, saute sliced ginger until fragrant. Add water, seasoning and bring to boil. Add in the remaining ingredients and bring to boil again. dish up.
3. Sprinkle yao char kwai on top and serve.

Wai San Soup





Serve 5-6

Ingredients
10 pieces of dried wai san
1 big handful of hoi jook/yook jok
1 tbsp wolfberries
8 numbers of red dates
300gm of pig's tail bone
Pot of water

Method
1. Heat up the water and add in all the ingredients when it boils. Cook in medium heat for 1 hour and turn to low heat for the next two hours.

Note: Buy Hoi Jook instead of Yook Jook cause it is 'sweeter'.

Sotong Ball With Vegetables Soup

Ingredients


Sotong Ball


Some vegetables


1 tsp Bovril chicken/beef


Water for the soup


Methods


1. Add in water and boil in a pot. Add in bovril to make a soup base.


2. Add in all ingredients and once boiled, dish and serve.


3. Add in about 1 tsp or less of fried onions with its few drops of cooked oil into soup.

ABC Soup


Ingredients A
400gm pork (tell pork seller it is for soup) / chicken meat
5 sticks of carrots
2 medium size potatoes
2 medium size tomatoes

Ingredients B

2 tbsp fish gravy / salt to taste

* 3 litres water (as a soup base)

Method

1. Boil water in a big pot. Add in Ingredients A.
2. Cook in a high heat for 1 hour.
3. Turn to low heat and cook for another 1 1/2 to 2 hours.
4. Add in Ingredient B.
5. Serve hot.

Chicken Soup



Ingredients
600gm chicken / half chicken, cut into small pieces
Ginger 6 slices, julienne cut
Sesame Oil 1 tbsp
Oil 2 tbsp
Salt to taste
700-800ml water

Method
1. Heat up sesame oil and cooking oil. Add in ginger and fry until fragrant.
2. Add in chicken and stir fry until cook.
3. Add in water and let it boil. Let it simmer in low heat for about 30 minutes.
4. Add in salt to taste. Dish and serve.
